#NationalWaffleDay Mmm…mmm…good

Guess what day it is? Yeah! It’s National Waffle Day. Thanks Twitter for letting me know. What’s really funny is, I just bought a waffle maker earlier this week. I had a craving for one. So, of course, I just whipped up some waffles for lunch since I felt like I should celebrate this awesome day. I decided to try something new and added some chocolate chips in them. Oh, boy, they were delicious. Never had that before. I thought I would share the awesome recipe for some waffles with you, so you can enjoy some yummy waffles on this joyous day!

Some of these ingredients are optional, and I’ll make a notation next to which ones are.

Let’s cook!

Waffles (Chocolate Chip)

3 eggs

1 cup milk

1/2 cup melted butter or margarine

1 Tbsp. Vanilla (optional)…I added it:)

2 cups flour

1/2 tsp salt (Seriously, though, I only put a few shakes in.)

1 Tbsp. baking powder

2 tsp. sugar

1/2 tsp. cinnamon (optional)…really adds a yummy flavor

1 cup chocolate chips (optional)…super, duper delicious

Preheat the waffle maker.

Beat eggs in a bowl until thick. Add the milk, melted butter and vanilla with the eggs and beat again. In a separate bowl, combine the flour, salt, baking powder, sugar and cinnamon. Gradually stir the flour mixture with the egg mixture. Mix well. Fear not, there will be a few lumps in there. That’s okay, don’t panic. *wink* Don’t stir too well. If you over stir, the waffles become tough. Add the chocolate chips last, if you so desire. But, seriously, try it once. So gooooood!

Add mixture to your waffle maker. Depending on the size of your machine is how much batter you put in. Bake according to your waffle maker’s instructions. Mine normally takes 3-5 minutes. And maybe I have a big machine, but this recipe made 3 waffles. I probably could’ve gotten four out of it if I hadn’t poured so much batter in.

And there you go. Waffles!…with chocolate chips:)
